MISSOULA – The Iron Griz – An American Bistro, located at 515 South Ave. E. at the University of Montana Golf Course clubhouse, will open for business Monday, March 16.
The Iron Griz offers a flavorful menu with a variety of local ingredients.
The building underwent a major renovation during the winter, including the addition of a full-service kitchen and new bar and tables made from locally sourced, beetle-killed pine.
The renovation was designed by Missoula-based Gavin-Hanks Architectural Studio, while Western Interstate Construction was the contractor on the project.
Chef Amber Lukas and her staff will create “New American” cuisine highlighting local meat, sustainable seafood and fresh produce. The menu goes beyond typical bistro fare, offering dishes such as smoked salmon nicoise and Waygu beef burgers. Through the UM Farm to College Program, Iron Griz will use local products whenever possible.
“Our food and drink menu will be approachable, yet interesting,” said manager Jan Jasperson.
“We are in the perfect location to serve the students and families in the golf course neighborhood, which includes University family housing,” said UM Dining Director Mark LoParco.
For the first few weeks, the Iron Griz will be open from 11 a.m. to 9 p.m. Monday-Friday. Beginning April 4, the bistro will be open during its normal hours, seven days a week, with menu items available for pick-up.
